One Pot Dish

Weekdays are usually not the days for me to be making complicated dishes.  Oh, who am I kidding? No day is a good day for making a complicated dish. I like the idea of having protein, vegetables and carb in one pot dish. One pot to stir and wash, easy peasy. You just need to gather some type of protein, green vegetable, starchy carb (preferably from the nature not the box), onion and tomatoes.

sausage, onion, green beans, tomato, sweet potato

Ingredients:

  • 3/4 lb of sausage (any kind you like)
  • 1 onion
  • 1 can of tomatoes (preferably 3-4 fresh tomatoes)
  • 1 lb of green beans
  • 1 large sweet potato
  • oil (for pan frying)
  • salt and pepper

Directions:

  • Cut up onion, sausage, sweet potato and tomato (if you’re using fresh).

chopped vegetables

  • Heat up your pan on high (I like to use my dutch oven but any pan will do) and pour your oil.

  • Put in your green beans and leave them on top of the pan (don’t stir, I’ll tell you why).

  • Cover your pan turn down the heat to medium and set the timer for 15 minutes (go check your email, drink some tea or respond to the group chat that you’ve been missing all day)

  • After 15 minutes, uncover your pan.

  • You’re done!

Tips:

  • You can use bacon instead of sausage, but you want to brown the bacon before putting in the onion and don’t use any additional oil.
  • I purposely did not cut the green beans and laid them on top because I don’t want to overcook it. If you are using celery and carrots you can cut them up just like the rest of the veggies and mix them well before putting the lid on, because they’re hardy vegetables and won’t become mushy after 15 minutes of cooking.
  • If you want to put leafy vegetable, mix it in after you turned off your stove. You just need to wilt it.
  • You can use white potato instead of sweet potato. Don’t cut the potato too small, unless you want to eat mashed potato.
