Bacon Stuffed Almond Waffle

This is a recipe for a plain waffle. People usually eat waffles with syrups, fruits or butters. That’s why I don’t put additional flavor in the waffle itself.  However, if you like eating your waffle just by itself. I suggest that you add a couple of table spoons of Coconut Sugar (or any sweetener of your choice) and a pinch of salt. You can also choose to make your waffle savory, in this case you might want to omit the vanilla extract.  I’ll show you how I like my savory waffle and some modifications to make a bacon stuffed almond waffle.

Almond Waffle Ingredients

This recipe makes approximately 4 servings

Ingredients:

  • 2 eggs
  • 1/4 cup of avocado oil (or other neutral tasting oil)
  • 1 cup of almond milk
  • 1 cup of almond flour
  • 1 tsp baking soda
  • 1 tsp vanilla extract (optional)

Directions:

  • Heat your Waffle Maker (grease it).
  • Mix all the wet ingredients together.

  • Add the dry ingredients, mix well.

Adding Dry Ingredients

  • Pour  just enough batter to cover your waffle iron (don’t over pour your batter, you don’t want to make a mess).

Waffle Batter on Iron

  • Close your waffle iron and wait (your waffle iron will be making a lot of steam, this means your waffle is not done yet).
  • When your waffle iron stops steaming, it means your waffle is done (I like my waffle a little crunchy, so I let it sit a minute or two longer).

Savory modification:

I like to put bacon in my waffle, I think bacon makes all food delicious. If you put bacon in your waffle you can omit the oil from the ingredients list, since the bacon will be releasing its own fat. Also, omit the vanilla extract (but if you think bacon and vanilla goes well together why not, put them together!)

This is what you do for the bacon stuffed almond waffle:

  • Cut the bacon in half, put it on the waffle iron as it is heating up. Close the iron.

Bacon on Waffle Iron

  • Prepare the batter as the above instruction.
  • Open your iron with the almost cooked bacon, pour the batter over the bacon (just enough to cover it).

Waffle Batter on Bacon

  • Wait until it is done.

Tips:

Start heating up your waffle iron before you gather all the ingredients and make the batter. This way you don’t have to waste time waiting for the iron to be hot.

While waiting for the waffle to cook, don’t just stand there. Clean up the mess you’ve made or if you already did that and have absolutely nothing else to do you can read  about how eating almond can help weight loss.
