Banana Berries Ice Cream

The weather is warming up and we start craving for cold treats. The easiest way would be buying ice cream, but I can’t find any store bought ice cream that is not too sweet for my taste. I also try to avoid blood sugar roller coaster. So, instead of going out to buy ice cream why don’t you buy these 3 things that will make ice cream.

Banana Berries Ice Cream Ingredients

Ingredients:

  • 1 cup of mixed frozen berries (or any berry you like)
  • 3 frozen banana
  • 1 can of chilled Coconut Milk

Directions:

  • Blend everything in your food processor.

  • You’re done! Enjoy the Banana Berries Ice Cream!

Super easy right? You can eat it right away but the texture will be more like a thick smoothies instead of ice cream.

Banana Berries Ice Cream Before Freezer

I prefer to transfer it to a container and put it in the freezer for some time so that it will firm up and more ice creamy. This is how it looks like after a couple of hour of freezing.

Tips:

  • If you want creamier texture, put the coconut milk in the fridge an hour or so before you start making the ice cream. Use only the really thick top part (you might want to use 2 cans of coconut milk since you’re not using the thinner part)
  • If you’re not using the thinner part of the coconut milk, don’t throw it away, you can mix it in the next time you make smoothies.
  • You can also make this even simpler, by only mixing frozen bananas and coconut milk, you might want to add more bananas if you’re not mixing the berries in. Personally, I prefer the banana coconut ice cream better, but my kids like this version better. The kids win.
  • Substituting the berries with dark chocolate is also delicious.  The possibilities are endless!
