Whenever I told my family that I am making bread, spaghetti, cupcakes or the likes. They always ask me right away, “no seriously, what are you REALLY making?” I guess they know me too well. They know that if I’m going to be standing and working in the kitchen, the result better be healthy. It’s not that I never eat unhealthy food, it’s just if I want to eat unhealthy food I don’t want to spend my time and energy making it, I’ll just buy it. Mashed Faux-tato are my alternative to Mashed Potato.
Personally, I don’t think that mashed potato is all bad. After all, it is still made of something that grows. I limit our carb intake because of our family tendency for elevated blood sugar.
Ingredients:
- Cauliflower
- Brown butter (or regular butter or ghee or anything that smells buttery)
- Garlic
- Nutmeg
Notice that I did not put the quantity of the ingredients, because you can adjust it according to your preference. I like garlic and butter so I used them liberally.
Directions:
- Heat up your steamer.
- Put the cauliflower in the steamer and let it steam for 10 minutes or so (until it is soft)
- While waiting for the cauliflower to steam, brown your chopped garlic until somewhat golden and crispy (not burnt)
- When the cauliflower is done transfer it to the pan with the garlic, add nutmeg and start blending it with hand blender.
- Add salt and pepper to taste.
- You’re done.
I like to serve this with steak and a side of veggies.
Notes:
When I need to blend hot food, I prefer to use stainless steel hand blender because I’m not comfortable putting hot food in plastic container, even if it said BPA free plastic.
