2 Ingredients Banana Pancakes

This Banana Pancakes recipe is one of the recipes that I didn’t learn from a food blog. I found this recipe while I was doing Pilates. I love doing Pilates with Cassey Ho, she used to teach Pilates class in my local gym. Her moves are killer, they will make me sore for days. I love it!

She has a segment called “Cheap Clean Eats“, this is where she post this banana pancakes recipe. Since then, I have often made this dish, with or without modification (it depends how much in a hurry I am to feed the kids)

Banana Eggs

Ingredients for banana pancakes:

  • 1 banana
  • 2 eggs
  • Some grated cheese (optional)
  • Maple Syrup (optional)

If you think you can finish a banana and 2 eggs, this recipe is good for 1 serving.

Directions for banana pancakes:

  • Mash the banana and mix it with the eggs (I use my Magic Bullet to save time, you can also just mashed your banana with fork and then mix with the eggs)

Blending Banana Eggs

  • Heat and grease your pan (I love using ghee, everything tastes better with ghee)
  • Pour batter and flip after the bottom side turned golden brown.

Tips for banana pancakes:

You can eat it with maple syrup, but I think it is plenty sweet with the banana. If I put maple syrup, I only put a little bit. I use a dropper. (often time if I pour it from the bottle, I poured too much)

Pancake with Maple Syrup

Since I like mixing sweet and savory, I had to add cheese on top.

Other combination that I also like is banana chocolate, you can add dark chocolate powder or shave some dark chocolate pieces in the batter. I would not rule out putting cheese on top of this combo either, I tried it and it’s delicious!

You can also make this with  a cup of mashed sweet potato or pumpkin, mix with 2 eggs and add a little bit of nutmeg.
