DOTD: Lazy Sushi

So, here was the situation. It was Sunday evening. I was already in my PJs.  Family was hungry. But I didn’t want to go out and didn’t want to cook. Wow, am I lazy or what??? Luckily, this lazy person went for a mini grocery shopping on Friday and had left over rice. I was thinking hey, I can make sushi with all these things. This is what I call “Lazy Sushi”. As I was laying everything on the table, I thought of an even better idea (read: an even lazier idea). What if I just give them the snack size nori (roasted seaweed) and put everything in a bowl so that they can just make their sushi as they eat.  That way I don’t have to roll sushi and they don’t have to eat my “not round and ugly” sushi (yes, they will not be round, I tried).

Smoked Salmon, Ikura, Tobiko, Avocado, Nori

This spread doesn’t require turning on the stove. How awesome is that? But I did steam the leftover rice for a little bit, so that my family wouldn’t have to eat cold rice. I’m not that lazy! (please)  I gave everyone a bowl with everything in it and put several packets of nori within reach.

This is how I ate it.

How I ate Sushi

If you’re on Paleo Diet or very Low Carb diet, just skip the rice. I like to eat this with a bit of rice because everything else is somewhat salty. Enjoy this Lazy Sushi!
