Eating healthy does not mean that you have to cut off dessert forever. Life will suck without dessert. Instead of depriving myself of yummy dessert, I choose to make a healthier dessert that is not loaded with sugar, like my version of a chocolate dessert.
Once in a while I might eat some glutteny (that’s probably not even a word), carby, sugary dessert, but only if it’s really really good. Plus, I will not be making it myself because not only that I’m not capable of making a really good dessert, I also don’t want to spend my time and energy creating my own poison.
Ingredients:
- 3 Tbsp of Raw Cacao Powder
- 1 can of full fat Coconut Milk (chilled)
- 2 Tbsp of Brown Butter (and or 1 tsp of Vanilla Extract)
- 2 Tbsp of Honey
- a pinch of salt
You can add more honey if you like your chocolate dessert on the sweeter side . My rule is; it is easier to put less to start with so that we can add as needed.
Directions:
- Put the coconut milk, brown butter (or vanilla extract), honey and cacao powder in a mixing bowl.
- Turn on the mixer on low to blend the cacao powder with the coconut milk. Turn it to high once it is mixed (You don’t want to turn it on high in the beginning because the cacao powder will be flying all over the place and your kitchen will be covered in cacao powder. How do I know this? I did that).
- Let it mix on high for about 5 minutes.
- Add a pinch of salt and mix again for a little bit.
- Turn the mixer off and start pouring it to ramekins or small bowls or you can also leave it in the big bowl and stick it in the fridge to cool.
As you can see, I did a pretty sloppy pouring job. Like I said before, I’m not good at making food look good.
Tips:
There will be noticeable taste difference if you use vanilla extract instead of brown butter. Personally, I like the taste of the one with brown butter better (try saying that really fast, Ha!) because it has a hint of caramel flavor. You can also put both in.
You can eat it just like that or put toppings on it. I happen to have strawberries so I’ll use that.
