Asparagus in a Blanket

When I see long food, all I can think of is to make a some kind of wrap out of it. My favorite ingredient to wrap it with is egg and my favorite long food is asparagus.  Instead of pig in a blanket, I’ll be making asparagus in a blanket (although there will be some pig involved too).

My close friends know that I always like eggs and they always make fun of the fact that I eat so much eggs. I’m so glad that people are finally over with the egg white craze because eating eggs without the yolks is…..meh.

Asparagus, Eggs, Ham, Green Onions

Ingredients:

  • 7 or 8 stalks of Asparagus (it depends how big you want your wrap to be)
  • 4 Eggs
  • 2 stalks of Green Onions
  • Slices of Ham (optional)
  • Oil for frying

This recipe makes 2 wraps.

Directions:

  • Heat your skillet.
  • Grill or roast your asparagus until soft but still bright green, make sure not to overcook it. Overcooked vegetables look like it has been killed for so many times, plus you will lose substantial amount of nutrition.

Grilling Asparagus

  • While asparagus is grilling or roasting (I’m grilling mine with my Electric Grill), chop green onions and mix it with the eggs.

Eggs and Green Onions

  • Peek on your asparagus, make sure they’re still alive. (if they look done set them aside)
  • Fry the eggs on the skillet, try to pour in a somewhat round shape ( if you can’t, no sweat! Mine is never round)

Eggs on the skillet

  • Flip gently when the bottom side is turning golden brown.

Eggs Flipped

  • Turn off stove.
  • Put egg blanket on the flat surface, put ham on top of egg blanket (if using) and put grilled asparagus on top.

Eggs Ham Asparagus ready to be rolled

  • Start rolling.

You can serve it with your favorite sauce. (My favorite sauce to date is still Tonnato sauce)
