Dinner of the day (DOTD) is definitely not 15 minutes to prepare. If I had just made the Chicken Tikka Masala then it would only be 15 minutes. This afternoon I saw Nom nom Paleo posting a link to a Paleo naan bread recipe that only has 3 ingredients. I was very curious and I have to try it today, since I have all the ingredients.
We love to eat Indian food, but since we reduce our carb and wheat intake I really don’t know how to eat Indian food. I love how Indian food always has so much flavors but all that flavors without naan bread or rice? It’s just too intense for me.
When I make Indian food, I like to buy ready made sauce from Costco. (Ha! you thought I made it from scratch in 15 minutes? Yeah, not gonna happen) I picked up the Tikka Masala sauce and I checked the label, it doesn’t have gluten but it has milk and safflower oil. Eh, it’s good enough for me. Gluten will bother me the most because I will have skin reaction from it and it is not pretty.
Ingredients for Chicken Tikka Masala:
- 1 chopped medium onion
- 1 container of Tikka Masala sauce
- 2 pounds of chicken thigh
- 1/2 lb spinach (you can put more if you’d like, my pan was almost overflowing, I should’ve use bigger pan)
- Ghee (or other oil)
Directions for Chicken Tikka Masala:
- Heat the pan, brown the onion until caramelized.
- Put in chicken and cook until the inside is no longer pink (cut your pieces smaller and they will cook faster).
- Pour the sauce, wait until it boils, stir in the spinach until wilted.
- Done.
Originally, I was planning to eat it with rice since I had some rice in the fridge. But, I was determined to try the Paleo Naan Bread recipe. (You should check out her website!)
So, here’s what the batter looks like, a mixture of almond flour, tapioca starch and coconut milk.
I like using my cast iron for this job, I also use my homemade Ghee for greasing the skillet.
Flip when one side is done.
I put the Naan bread on the wire rack to cool down a little, while I scoop the Chicken.
Dinner is served. All this food took me 30 minutes to make.
But, it’s all worth the effort. My pickiest eater ate so fast and even had second. All thanks to the yummy “naan bread”.

Love the post, thanks for sharing my recipe 🙂 You’ve got to try my butter chicken sometime… it’s super easy and I bet you’ll like it more than the pre-made masala mix!
The naan bread was a big hit with the kids. They ate everything so fast, even my pickiest eater. I’ll be making it more often and will definitely try your butter chicken 😉
