My husband just got back from a business trip. It means he needs major re-nourishment since he has been eating out for several days. I know he can choose his food wisely but I highly doubt the restaurants are using good quality ingredients. So, this is what I like to whip up if I think my family needs nutritional boost: A breakfast of smoked salmon, poached egg, spinach and avocado.
Directions:
- Fill a pot with water for making the poached eggs. (If you don’t want to wait around too long fill it with boiling water)
- Start sautéing the spinach (I use ghee or Avocado Oil)
- When the water in the pot starts making small bubbles, stir vigorously (like you’re making a tornado in the water, seriously I don’t know how to describe it any better). While the “tornado” is still going on pour your eggs gently (it’s okay to put more than one eggs at once, you can separate it when you lift it up) turn the stove to low. If you don’t get it just watch simple way to poach an egg.
- Once the eggs reach your desired consistency (I like mine super runny), pick them up with slotted spoon (gently).
- Put the cooked spinach on the plate, put the poached egg on top.
- Add smoked salmon and slices of avocado.
- I like to top it off with freshly ground black pepper and my home made mayonnaise. (why? because I have it, it’s yummy and it’s healthy)
