What in the world are zoodles? It is noodles made of zucchini. Some people cook it, but I think they taste just fine uncooked. Plus, it will be done faster. I’m all for easier and faster version of anything.
My friend has a vegetable garden in her backyard and she grows zucchini among other things. She had an abundance of zucchini so she graciously shared it with us.
Ingredients:
- Zucchinis (if you have small zucchinis you might want to use about 1 zucchini per person, mine is huge so I only use 1)
- Salt
Directions:
- Slice the zucchini with a julianne slicer, or use a spiralizer (even better) if you own one.
- Put your sliced zoodles zucchini noodles in a colander or a big strainer.
- Sprinkle some salt all over the sliced zucchini noodles and let it sit, this will make the zucchini sweat.
- Put a plate underneath the colander or strainer to catch the water.
- Leave the zoodles zucchini noodles in room temperature until you are ready to eat.
Tips:
You can serve zoodles just like regular noodles. It goes well with meatballs, marinara sauce, pesto, or any other sauce you can think of. Today I’m pairing my zoodles with Beef Adobo.
